Default Restoring a fiddle, sort of

I have my grandfather's grandfather's fiddle. After some research by way of the tag still intact viewed through one of the 'f' holes, is that its value is zero. It is a copy of a copy of a Czech Straduarius NOT Stradivarius.

No matter to me, I just like having it. My plan is to have a local shop put a replacement bridge on it, string the fiddle incl the bow I still have, repair the cracks, and then learn to play it.

The dark finish is rosin that was never cleaned off use after use.... Any craftsmen out there know how to remove the caked-on rosin? I'm curious...
