Which Knife?

If you want to try a Global knife their 'Western style' paring knife is on sale on Amazon. I've been converted to Global. Like their 'one piece' integrated blade/handle design.

I have a nice collection of both Henckels and Shun knives. The Shun knives are scary good. Wouldn’t part with them for anything.

Needed another paring knife so went with a 4" Cutco. Very nice. Like their handle design. Naturally comfortable to hold.

Here is a company up by Antonmb that make custom knives - seem hard to get but quality, not crazy about the engraving but appear to be high quality

His are the holygrail of most serious knife fanatics. I’ve been on his waiting list for a custom chef’s for the last 4 years and my name will prob never come up in the lottery (I do have 4 or his “picnic knives” and they’re awesome). His older non-damascus carbon blades occasionally pop up on ebay and sell for a minimum of $750-$1000/inch.

You can still get the Kramer profile with the Zwilling Kramer line. 8” and 10” in the 52100 steel are excellent cutting profiles, and the carbon steel gets scary sharp. If you’re not keen to paying a bit of care to your knife, a stainless version is available.

My other two American made favorites are Murray Carter (https://www.cartercutlery.com) and Haley DesRosiers (http://www.alaskablades.com).

Learn how to properly sharpen a knife. Get a carbon steel knife and see how fun cutting in the kitchen can be. Carbon steel is not hard to take care up, you just dont leave it laying around wet. Use to cut, rinse off, dry with towel. Give a quick rub of oiled rag to keep it from rusting while store away (I use an old eyeglass hankie and keep it in edge of knife drawer)

There’s a great forum questionnaire you can complete and get recommendations by kitchen knife fanatics. Be aware, it’s an addicting hobby, even if you’re not a prof. chef!
