Ok, only I would think the advantage to setting fixed would be you're less likely to accidentally bump the knob and lose volume, so essentially, the best way is to set to fixed.

If you read the specs in the C1100 owners manual the maximum input voltage is 20V for balanced and 10V for unbalanced so 6V is probably fine regardless if you are using balanced or unbalanced. Also if you look at the specs for the various McIntosh components with fixed outputs like the D150 or D1100 for example they have a balanced output of 4V and their unbalanced is 2V.

I prefer the 6V output of my Rossini, just a bit more dynamic, you can just give it a try, if you hear any distortion you can always use the 2V setting.

Any one know what sort of volume control the c1100 has? What I was able to read said something to the effect of "Digitally controlled, analogue volume control" .. which sounds like neither or is it both? confusing ... is it digital or analog?

It is a resistive ladder volume control that provides both attenuation and gain depending on the setting, simultaneously providing maximum signal to noise ratio and overload margin. It operated by the units microprocessor, so it is digitally controlled. McIntosh has been using this scheme for over 20 years. It is dead quiet and operates perfectly.
