Tony, I like your choice of John Adams!

I'd like to add a couple from the periods we haven't mentioned yet.

Polyphony/Renaissance: Josquin des Prez, Johannes Ockeghem, Thomas Tallis, ...

More form the 20th century: Shostakovich (good pick, Serge), Weinberg, ...

Modern: Arvo Pärt, Philip Glass, Górecki, Penderecki, Stockhausen,...

Probably also the ones I listen to the most, but thank God we have alternatives.
Sometimes I prefer Händel to Bach (when I'm in a certain mood).
Haydn to Mozart (idem).
Schubert to Beethoven (idem).

Sometimes it can be a modern evening (like Corigliani, Saariaho), at other times it is a medieval evening, or a Russian one.

We live in a glorious time to discover music, it is so accessible and it has never sounded better.
