I have been playing with 7.1 and 9.1 and now 11.3 for a while now and I think that in a lot of movies, the rear surround channels in 7.1 do not usually create a huge impact. Some newer true 7.1 soundtracks have finally opened them up a fair bit but you should see more impact with the additional front channels (DSX/NeoX). NeoX in particular with Dredd and Expendables 2 is just quite spectacular.
Even with movies not originally designed for 11 channels expansion, like Transformers 2, the use of the wide channels can be incredibly immersive like in the forest IMAX fight sequence. When Megatron was circling round Sam, the sound pans seamlessly from the centre to the left, then left wide then left surround... really puts you right smack in the centre of the action.
