Had a few bottles of Primitivo with dinner tonight. One of my interns is from the town where the Primitivo grape originates - Manduria - and she gave us a lesson on preparing and cooking a bolognese sauce (vs. my "midwestern recipe" of dumping in a jar of Rao's into cooked hamburger) and I was extremely impressed with the role of technique in her approach - both in terms of the care taken to do it right, and the results.
On top of the excellent food, we really enjoyed the Primitivo! A couple Aleve's will be in order on my way to bed!
