I am going to start with a Gold Lion or new Electro Harmonix Gold Pin 6922 since she is still breaking in and see how the sound changes. I already have the EAT but do not want to waste it on break in.

Whatever way you want to do it will work.

FWIW, I wouldn't worry about wearing out the tube with break in and here's why: 1) it has to be broken in to sound it's best and it should only take 40-50 hrs at most to do this 2) The estimates for tube life that C-J gives are VERY conservative. 6922s are amongst the more durable of tubes out there (they were designed to be a more durable tube than say, 12AU7, for military applications), and in low-drive situations (like preamps), these tubes should be good for quite a bit more than 2,000-3,000 hrs. 3) The EATs in particular are known for being extremely durable, so I would expect, much like Telefunkens, that they retain nominal performance for close to 10,000 hours.

I thought 2K-3K seemed low. My stereo is on 8-12 hrs a day and it's only one tube so I am not too concerned. If and when I use my tube amps and/or get a C-J amp, I'll have to be more conservative on usage.

Yeah, you should be fine.

It would be nice to have some comparisons between the stock tube, the Gold Lion and the EATs. I expect the Gold Lions will be better than the stock tube, or they may only be different, but not better, per se. C-J actually does a very good job of voicing the "stock" tube they select for the particular component.

The EAT may very well be better, but will they be better enough to warrant their price? Only the end-user can decide that.

I can tell you that the NOS Ediswan 6922s I use in the input stage of my LP70S power amp are better than the stock C-J $19 E-H tubes. But at $150 PER tube, they are NOT 8X better.

I've been running standard EH 6922's in my 17LS (now over 3000 hours and still going strong on this quartet) and am about to order a backup set for when I need to replace them. Since Joe mentioned them, any opinions on what, if anything, EH's gold-pin version would bring to the table? Thanks.

All I know is that the EH Gold pins were the least expensive of all the tubes I've ordered

Virtually nothing as far as I know. Actually, gold is not the best-sounding metal, and does not sound as good as tin or copper, for example. It was only used historically because it does not corrode.
