Default Elipsa SE speaker connects

How come these speakers only have one wire connects on back while so many other speakers have 2?

The Elipsa SE has a single pair of terminals because there is not sonic advantage on having two on its crossover design. Biwiring improvements are a function of crossover topology. Doesn't mean that the crossover choice was better because it is biwireabe, just that it is biwireable

Often companies put a second set of terminals on a speaker because audiophiles expect it, regardless of whether or not it will improve the performance of the particular speaker.
