Yeah, I could have put OMs at either end, but 1) I wanted to try the EtherREGEN (ER). As it's an Ethernet switch, it has a lot more configuration flexibility than a just fiber media convertor. Prior to getting the ER, I was using a generic FMC at the music server end and with ER, I had outstanding FMC functionality with excellent clocks, PHYs and flip-flops at both ends (which matters) and 2) As Jesus is at Sonore is not at all forthcoming about the components in his products, I didn't know if the clock in the OpticalModule (OM) would be as good as ER's.

Yep, you could do any of these various setups. The simplest would be either A or D. I'd probably choose D.

The reason I implemented optical is that its much easier to route in my house than copper Ethernet, simple as that.
