It could also be DOG, and in NY, chicken can be pidgeon.

Howie.......I hear you loud and clear. Today a truck, supposedly carrying a load of rabbits, was stopped en route to restaurants in China near Xuzhou, in the eastern province of Jiangsu. Dog meat is also thought to be a staple food in this area of China and people believe it is the best meat to keep them warm during winter. The old woman working the grill said, "woof, woof."

Everyone here thought I was kidding about the meat in fried wantons. I was, but only a little. Honestly, you really do not know. A truck load of cats makes a lot of Moo goo gai pan.
