Default Pork ribs

Any pointers to share on cooking pork ribs on a 2-burner gas grill? I do have a smoker box, too. My biggest hurdle seems to be low temp - with smoker box burner and one grill burner going 300° seems to be the lowest I can get the temp. Low enough?

Keep the top slightly open at all times. Use a brick or a rock to hold it open to lower the temperature.

I do the ribs around 250 or so.

myself, after removing the 'shine' off the back, dry rub of choice, then I put them on the middle rack of the oven for 2 1/2 hrs @ 165-175 degrees, finish on the grill with a sauce of choice(mine is half KC Masterpiece and half Mr Stubbs) for 5-10 min.

fall off the bone good !

Getting good results with ribs on a gas grill is doable - I've gotten fantastic results, but it has taken time to refine the process.

Question - do you have both burners on, but low? That may be why you can't get under 300F.

I have a 3 burner grill and what I do is to bbq the ribs indirect: left burner on, center and right off.

I also stack the ribs further away from the left burner by placing them on the upper warming rack over the center and right burners.

After researching some different bbq sites and watching some bbq shows - it seems a lot of top finishers actually get their rigs up as high as 275F and cook baby backs for 3 hrs.

I've gotten good results a bit lower at 250-260F.

Before I got my smoker, I would smoke ribs in gas grill then in oven @225-250 for 4(?) hours then finish on grill just before serving.

I keep left burner off (ribs on this side), right burner on low, smoker box burner on low, and rotiserie burner off. So I guess I actually have 4 burners total. Thanks guys for the tips. Is a pan of water below ribs required?

Are You using the thermometer built into the grill? I ask because they are not very accurate being at the top. If you're reading 300 it may be 350 on the grill. Ribs IMO are best at 225. Low and slow
