The big difference between PVW and most bourbons, besides the aging, is that they are wheated bourbons. Normal bourbons have a minimum of 51% corn (typically 70-80%) in the mash bill and use rye as the other flavor grain, which imparts the spiciness and bite typically associated with bourbon. PVW bourbons use wheat as the secondary grain which gives the bourbon more of the characteristic sweetness such as vanilla and toffee. This is due to the wheat not producing as strong of a flavor compared to the rye, which allows the sweetness from the corn and the barrel to show up in the bourbon. When compared to other bourbons, PVW are smoother with much more pronounced flavor characteristics such as toffee and vanilla. Similar to great wines, they also have a nice long finish in them as well.

I've sampled the entire line, and prefer the 23 year but it is difficult to find (like all of them). Apparently they only recover a little over 3 gallons of bourbon from a 53 gallon barrel during the aging process of the 23 year. That's a whole lot of juice to lose to the angel's share.

Not to hi-jack but last week picked up some Bulleit 10 Year Bourbon, very good, not Pappy league, but nice

Just found out Utah will not be getting any this year, also was told that a bunch of other states as well. Pissed me off.
