Perhaps it's how the data is received and processed? which has lots to do with timing. I think that is the discussion; each method has a way of handling the data that may have some impact on the fidelity of the sound.

The SPDIF signal carries not only the data (1's and 0's) but also a clock signal.
It is the clock signal that gets distorted. There has been several very well written papers on interface jitter published in Stereophile.
