Update.
Grill is working as advertised. We had 18 f temps With 14 inches of snow this weekend and in 10 min grill temp was over 500 f (yes I did grill in a snowstorm) I love this grill |

I do have a TEC grill from the late 90's that works well for this but not so much for slower cooking. It is this grill I'm looking to replace. Sous Vide is great for any avian or mammalian protein. Not a huge fan for fish. Try bacon overnight at 147F and then in a hot pan to crisp a single side. Chewy and crunchy at the same time
