Season liberally with sea salt and coarse black pepper. Toss immediately into a hot cast iron skillet. Once seared on both sides (cast iron is not blisteringly hot at this point, so the butter will not burn), add butter, fresh rosemary, fresh thyme, and a clove of garlic. Ladle infused butter over the steak until rare or medium-rare. Rest 5 minutes and enjoy.
