Doug Lax: if you can, try Kiawe wood. My inlaws bring me back some when they visit family back home. Pistachio sounds interesting...

Being originally from Texas, my DNA says mesquite is the best. I have also smoked and grilled with apple, pear, pecan, hickory, oak and alder. I love pecan for chicken and turkey, apple for pork, and mesquite for beef brisket.

They get it from Hawaii. It's in the mesquite family and grows all over there. Very good smoking and burning wood. I like cherry and apple also.

I have noticed that Smokewood is pallet specific. I happen to really like pecan and a good friend cannot stand it. The same guy really likes cherry and I don't care for it. For pork shoulder I like hickory and Plum . Four ribs I use peach with a little bit of Hickory. For chicken I really prefer peach straight. For turkey I like pecan straight.
Back a few years ago I used peach on chicken wings with a dry rub and sauce and took second place in the KCBS event for the state of Michigan. Less is better when dealing with nut woods. I really want to try Lemon wood on fish I've heard people really like that.
