If you are replacing shelves, I would replace them with maple cutting boards. I bought a huge maple cutting board for the top of my VPI turntable stand. Because cutting boards are strips of wood that are glued together, I think they isolate better than a solid piece of wood.
If you are building a rack from scratch, I would go with either maple or oak. I really like the stands that Timbernation makes. If it were me, I would probably do something like one of their racks.
