One of my favorite foods is country pate' (sorry - can't find the accent aigu), which is difficult to find in the U.S. and pretty much impossible in southern NJ. So, decided to give it try. Quite labor intensive and takes 2-days to complete. But, I hit upon a great recipe

Fruit, cheese, mustard (real Dijon, of course), cornichon, chutney, good bread along with good wine, cognac & port. Yum. Very much worth the effort and I'll be making another next week.
