I have a 16 pounder queued up and coming out of the refrig to rest here in a few minutes; flew up to Buffalo and Rochester from SC to hang with sister and now at brother's, both in the snow. Family likes the more traditional prime rib/oven prep so did up a pot of full demi-glace from veal neck bones+short ribs+marrow bones last night and will pair with home-made horseradish sauce, kickass au jus from the demi, grilled veggies (various) and all the fixin's later today after an all-day slow roast + final crusting. I love the oven method but I'd rather be grillin' + smoke out in the snow for this big rack/roast...
