You MUST go to Bouchon in the Venetian for breakfast. It's on the 10th floor. Totally worth finding. It has no equal.
Mesa Grill at Caesar's is a Bobby Flay restaurant I like very much. Moderately priced.
In the Aria, the tapas at Julian Serrano are sublime. You'll have to go to Barcelona to match them.
I recently splurged at Joel Robouchon in the MGM Grand. Right next door was the less expensive Atelier Robouchon. Fantastic.
Lastly, I think the best steak in Vegas is at Craftsteak in the MGM Grand. Really phenomenal.
