Recording/mixing engineer is definitely a huge factor. Can’t overcome a bad acoustical space where the recording took place very easily but there are plenty of great studios out there. Not every studio is at the level of Abbey Roads but that is not absolutely necessary to produce a sonically solid final product. Plenty of great live recordings where the talent clearly showed through.
“Jazz at the Pawnshop” is tremendously satisfying, even with the background noise of footsteps, plates and glasses clanking, which only adds to the charm and authenticity of that moment in time.
