Watch making by the way is long ways from what it used to be. The high level of automation and CNC lathes/milling machines making small parts is the norm. You are not going to see the old fashioned wheel cutting by hand for many reasons.
So the final assembly by the men dressed in white lab coats with an eyepiece loupe putting the finishing touches on the outrageously expensive watches in the Swiss "cartel" is a great illusion of the old artesian craft.
