At the most basic level, a subwoofer cable is identical to any rca or xlr terminated interconnect that you would connect components with.

But as with design differences in interconnects, manufacturers alter the design for the specific purpose as a subwoofer cable as they see fit, with things like shielding, wire gauge, winding, and material, etc.

The biggest difference I noticed when I've used a subwoofer and have had different cables to try has been in perception of tightness and clarity of bass frequencies. Differences that were enough to persuade me to purchase a cable specifically made for that purpose even if it cost a bit more than a standard interconnect cable.
