Craig,...an iPhone 8 or 8+ default camera resolution is 12MP and cannot be changed...similar to the new S10+. The only options are aspect ratio. 12MP at 4:3 aspect ratio equates to 4032 x 3024 for a photo size. Other aspect ratios 16:9, etc yield slightly different sizes such as 4032 x 2268 for 16:9.
