I have been collecting knives for over twenty years. I look for high quality hand made knives, and I have an interest in German made knives, particularly Boker.

Here is a hand made knife crafted by JD Bailey of Tennessee. He is a true craftsman, and fashions amazing knives. The blade is Damascus steel, the finger guard is layered pure silver and pure copper, the handle is fossilized hippopotamus tooth with a marvelous hand carved scrimshaw of a bobcat chasing a rabbit, signed and dated by the artist, C. Hargraves '96. The knife is so well balanced you can put your index finger on the finger rest in the handle, open your other fingers and the knife will remain balanced right there.

Dan... Guess what; I have a huge knife collection. They are all back in Florida though. :sigh:

Here is my oak and glass knife display cabinet, starting with the top shelf. The two fillet knives on the top shelf, one with maple burlwood handle and the other with Ivory handle are more of JD Bailey's very fine work.

Ivan.......Gee, I wish I had started this thread a few weeks earlier. I would like to see some of your knives.

Alright then, you've got a few too! ;)

I have HK, Boker, Gerber, Microtech, SOG, Benchmade, to name a few. Lot's of Military issue, and full autos also.

I don't Collect but I like using Laguiole Knives for eating and Wustoff Knives for cooking. :yes:

Howie.......I agree with you. The Wustoff Knives are excellent for cooking. It is hard to beat Solingen, Germany made knives for quality and long term durability. This seven piece set is under $300, which is amazing when you consider a single high quality folding knife costs more.

I used Wusthof Grand Prix for many years, but switched to (K-)Sabatier. It wasn't about the quality of the Wusthof - as you say, it is excellent - I just found the shape of the French style blade more to my liking and better suited to my prep style. Long and triangular for more of a slicing motion, compared to rounded (on the German blade) for more of a rocking motion.

Anyone using full carbon ?
