A post gym vegan meal tonight: seared eggplant/squash/portabello/orange pepper taco with cashew sour-cream and lime soaked avocado, side of black beans with shiitake mushrooms and shallots.

Garlic and lemon pan roasted cornish game hen overtop roasted spaghetti squash and spinach sautéed in hen juices, roasted purple fingerlings.

Cooking at the gf’s house, can’t see it but just out of focus is a project debut Dinosaur Jr. editionfeeding a samsung soundbar for background music in her living room...far from audiophile standards but good for her and allowed Led Zeppelin’s Mothership kept me company while cooking tonight.

Have a couple of Cornish in the frig that will get roasted in the next few days (sounds like a good meal for our up-coming storm). Wish I had taken a pic of my wife's coq au vin from last night.

Yum. Was Norwegian salmon for us. Though, at 18F & dropping, with a 25mph breeze outside, cooked in the kitchen with long-grain wild rice & snow peas. Lemon-butter sauce for all.

Wondering whether I should pony up $25 so I can post pics.

Clone of cassoulet we had in carcassone - carcassone was not our thing though and I dropped my S7 edge and cracked the screen. However it was the best cassoulet I've had. Big confit duck leg per person, perfectly crisped and juicy sitting on top of piping hot bean stew w a confit duck gizzard, and sausage made w pork and some foie.

Crusty bread. Green salad w vinegar, chopped onion + chopped tomato + lots of black pepper and toasted hazelnuts

Fast Beef tenderloins
 
We had marinated 'fast-beef' quick-seared tenderloins with grilled asparagus.

Fast-beef?

Well, a number of hunters in the family; some are members of a NY hunt club which works with a local farmer to have feed corn planted on the grounds. Hence, corn-fed venison which they term 'fast-beef'. Phenomenal.

Summer here. cheat weekend saturday dinner at the beach

Salad + wood fired oven pizzas:

Anchovies, bell pepper, eggplant
White sausage, anchovy, eggs (added in last 30secs)
Margarita
Parma ham and basil
Mish mash of leftover toppins

Cheese - parmiggiano reggiano, goat cheese feta, italian mozzarella, fresh cows milk ricotta

Crust - freshly ground organic hard red whole wheat with tiny bit of olive oil and milk. retarded for 20 hours.

Veggies - basil and eggplant from our garden

Wine - cheap very cold prosecco

Dessert: papaya and pineapple, sweetened taro/sweetened banana w frozen coconut cream

Really good. Been a while since i fired up wfo. Favorites were the eggplant pizza and the one w eggs. crust was v good. slightly thicker than w white flour but tasty. not easy to make good whole wheat crust. in between a ny and neapolitan crust. i would have preferred slightly more crisp but only preheated oven an hour. used the wfo because our viking was wonky. maybe overheating because steel pizza plate was too big
